White Bread

I purchase the ingredients from http://www.snk.com.au

Makes 2 Loaves

Ingredients:

  • 1200gm untreated flour
  • 1 tablespoon natural improver
  • 3 teaspoons salt
  • 1.5 tablespoons dry active yeast
  • 3 teaspoons sugar
  • 1L of very warm water (400ml boiling : 600ml room temp.)
  • 1 tablespoon oil (optional)

Directions:

  1. Mix the dry ingredients in a large bowl and make a well.
  2. Pour in 3/4 of the liquid, add oil and mix thoroughly.
  3. Add half of remaining water and mix. Let the mixture rest for a minute or so, then add enough of the remaining water to create a moist stiff dough.
  4. Place a sheet of clingwrap over the mix and put somewhere warm until dough has doubled in size (sink filled with warm water is an option).
  5. Remove the clingwrap and turn dough out onto a floured board/bench.
  6. Oil the tins.
  7. Cut the dough into quarters. Take one quater and fold it into itself about 20 times. Make into a ball, and place in a tin, smoothest side up.
  8. Repeat for the other quarters.
  9. Spray or brush with water, and add seeds or flour to the top.
  10. Allow the dough to double in size again. Preheat the oven to 220degrees (200 Fan forced).
  11. Bake for 30minutes, turn out onto cooling racks immediately.

Options:

Light Wholemeal: Sub out 300gm of untreated flour for 300gm of Wholemeal flour (my fav)

Light Rye: Sub out 300gm of untreated flour for 300gm of Rye flou

Multigrain: Add 100gm of a grain mix to any of the above options.
