Apple Squares

Ingredients

  • 340 g packet vanilla cake mix (will be used for base, can be cheap brand)
  • 1 cup desiccated coconut
  • 125 g butter, melted
  • 400 g stewed apples
  • 300 g carton sour cream
  • 1 egg, lightly beaten
  • 2 tsp cinnamon sugar

Instructions

Preheat oven to 180°C. Line base and sides of an 18 x 28cm slice pan with baking paper.

In a large bowl, combine cake mix, coconut and melted butter. Press into prepared pan. Bake for 15-20 minutes until golden. Allow to cool slightly, then press apples over base.

In a small bowl, combine sour cream and egg. Pour over apple and sprinkle with cinnamon sugar.

Bake for 15-20 minutes, until set. Allow to cool in pan. Cut into squares and store in airtight container.
