Choc-Chip Cookies

Ingredients

  • 125 g butter
  • ½ cup sugar
  • ½ cup brown sugar, lightly packed
  • ½ tsp vanilla essence
  • 1 egg
  • 1 ¾ cup self raising flour
  • 125 g chocolate chips
  • 60g chopped pecans
  • Pinch of instant coffee

Instructions

Line a tray with baking paper. Preheat oven to 180°C (160°C fan forced).

Cream butter and sugars until light and fluffy. Beat in egg and vanilla essence. Sift  instant coffee into flour, then stir into butter mix. Mix in chocolate chips and nuts. Forming into small balls, place onto trays allowing room to spread. Bake for 10-12 minutes. Loosen while warn, cool on racks.
