Coffee Creams

Ingredients

  • 2 cups self raising flour
  • 125 g caster sugar
  • 125 g butter
  • 1 tsp instant coffee
  • 1 egg

Coffee Butter Icing

  • 6 tbsp icing sugar
  • 3 tbsp butter
  • Instant coffee to flavour

 

Instructions

Line some trays with baking paper. Preheat oven to 180°C.

Cream butter and sugar till light and fluffy. Beat in egg. Sift flour with instant coffee, mix into butter mix. Drop in small blobs (about ½ tsp) on to trays. Bake for 10-12 minutes, watching that they do not brown too quickly.

Remove while warm, cool on racks. When cold join with coffee flavoured butter icing.

Butter Icing

Cream together icing sugar and butter, add instant coffee to flavour.
