Cranberry Camembert Muffins
Ingredients:
- 2 cups of flour
- 2 tablespoons caster sugar
- 2 eggs, lightly beaten
- 1/3 cup cranberry sauce
- 125gm camembert cheese, finely chopped
- 1/2 cup, plain yougurt
- 1/4 cup milk
- 60gm butter, melted
- 1/2 cup cranberry sauce (extra)
- 1/3 cup chopped walnuts (optional)
Directions:
- Grease a 12 hole muffin tin.
- Sift dry ingredients into a large bowl.
- Stir in eggs, sauce, cheese, yogurt, milk and butter. (Seemed dry, added extra milk until normal muffin mix consistency reached, worked well)
- Half fill each pan with mix.
- Drop a rounded teaspoon of extra sauce into the middle of each pan.
- Top with remaining mixture. Sprinkle with nuts.
- Bake in a moderately hot oven (I used 180C) for 20mins.
