Cranberry Camembert Muffins

Ingredients:

  • 2 cups of flour
  • 2 tablespoons caster sugar
  • 2 eggs, lightly beaten
  • 1/3 cup cranberry sauce
  • 125gm camembert cheese, finely chopped
  • 1/2 cup, plain yougurt
  • 1/4 cup milk
  • 60gm butter, melted
  • 1/2 cup cranberry sauce (extra)
  • 1/3 cup chopped walnuts (optional)

Directions:

  1. Grease a 12 hole muffin tin.
  2. Sift dry ingredients into a large bowl.
  3. Stir in eggs, sauce, cheese, yogurt, milk and butter. (Seemed dry, added extra milk until normal muffin mix consistency reached, worked well)
  4. Half fill each pan with mix.
  5. Drop a rounded teaspoon of extra sauce into the middle of each pan.
  6. Top with remaining mixture. Sprinkle with nuts.
  7. Bake in a moderately hot oven (I used 180C) for 20mins.
