Raspberry and Coconut Slice
Ingredients
- 170 g packet white wings biscuit base
- 80g butter, melted
- 2 eggs
- ¾ cup raspberry jam
- 1/3 cup caster sugar
- 2 cups desiccated coconut but
Instructions
Preheat oven to 180°C (160°C fan forced). Line a 19 x 29cm slice pan with baking paper. Mix together biscuit base and butter, then press into base of prepared pan and chill for 10 minutes.
Spread raspberry jam over base. Whisk together eggs, caster sugar and coconut, then spread over jam. Bake for 30-40 minutes until firm and golden.
Cool in pan. Cut in squares and store in an airtight container.
